As a St. Louisan, I find myself driving to Chicago at least two or three times a year, if not more. That roughly five-hour drive can be pretty tedious if not broken up, so why not make a pit-stop?
On my most recent excursion to the city for the Festival of Wood and Barrel Aged Beers in November, I made a point to stop at one of my favorite Illinois breweries, Destihl in Normal, IL to see their new brewing facility.
According to Destihl’s Brewery Brand Manager, Katheryn Tilley, the new brewery space, which began operations earlier in 2017, was on track to produce 15,000 barrels for the year, despite a month-long gap while moving
When I visited it was just as the brewery’s big Russian Imperial Stout, Dosvidanya was preparing to hit shelves with their seasonal Cranberry Kriek on deck for the wild sour series. The beautiful new brewery is lined with barrels, most filled with Saint Dekkara at the moment. According to Tilley, empty Dosvidanya barrels will soon be filled with Cerise.
What else is on the horizon for Destihl? Changes for 2018 include Pilsner, Milk stout, and Amra Mango IPA coming back as year-round offerings rather than seasonal releases.
